
Fresh Tomato Salsa

Fresh tomato salsa, with marinated red peppers, pickled red onions, and lime juice - perfect for tacos and nachos!
Ingredients
- 500g tomatoes, finely diced
- 150g roasted red peppers, finely diced
- 1 large red onion, finely diced
- 1/4 cup boiling water
- 1/4 cup cider vinegar
- 1 tbsp sugar
- 1 tsp lime juice
- 1 tsp sea salt
- 1 small bunch coriander, finely chopped
Instructions
- In a small bowl, combine the onions, water, cider vinegar, and sugar. Cover and set aside for 1 hour.
- In a large colander set over a bowl, season the tomatoes with the salt and allow to rest for one hour. Discard excess juices.
- Strain off onions, and add to tomatoes.
- Add peppers, coriander, lime juice and toss through until well mixed.

Fresh Tomato Salsa Recipe
One of my favourite things to do to relax is making a salad. There’s something completely therapeutic about slowly slicing and dicing, marinating and tending to vegetables, ensuring you get the most out of each and every colourful bite. When it comes to my fresh tomato salsa, I spend as much love and care preparing it as one would a prime cut of steak – or a roast chicken!
I finely dice the tomatoes, sprinkle them with a generous pinch of salt and then strain them in a colander or sieve for at least an hour. This helps draw out the watery juices of the tomato, and enhances their natural flavour. Afterall, there’s few things worse in the culinary world than a soggy salad.
Next, I quick pickle red onions to maximise their natural sweetness, and to remove the burn often associated with raw onion. Cider vinegar, sugar, salt, and boiling water are added to the finely diced onions and after an hour the onions are still crunchy, but deliciously mild and sweet.

For the peppers, I use marinated roasted peppers from a jar. These are sweet and packed with flavour. However, you can always use raw peppers if you’d prefer. Personally, I’m not a fan of raw red pepper, but roasted or marinated? They are one of my favourites ingredients.
Then we have the coriander – a divisive herb if ever there was one. Did you know that some people have a genetic variation that makes cilantro taste soapy? Thankfully, to be it is a wonderfully fragrant herb that really brings all the other ingredients together for my delightfully delicious, fabulously fresh tomato salsa.
I serve this tomato salsa whenever I make tacos, nachos, or any other Mexican or Tex Mex inspired foods.
