
Spicy Sausage & Halloumi Traybake

An easy traybake featuring spicy pork sausage, halloumi sweet potato and tomatoes, full of rich, fabulous flavours!
Ingredients
- 400g spicy pork sausage, diced
- 250g halloumi, diced
- 1 small sweet potato, diced
- 250g baby tomatoes
- 1 tsp oregano, dried
- 1 tbsp garlic infused olive oil
- Salt & Pepper
Instructions
- Preheat oven to 190C.
- In a large pot, cover the diced sweet potato with cold water with a large pinch of salt. Bring to the boil over high heat and boil for 5 minutes. Drain and set aside.
- Layer spicy sausage, halloumi, sweet potato, and tomatoes on a baking tray.
- Drizzle with garlic-infused olive oil and sprinkle with oregano.
- Toss all ingredients together and season with salt and pepper.
- Transfer baking tray to the preheated oven and bake for 30 minutes.
- Remove from oven and toss all ingredients, before returning to bake an additional 30 minutes.
- Allow resting for 5 minutes before serving.

Spicy Sausage & Halloumi Traybake Recipe
Tray-bakes have become a bit of a cultural phenomenon lately. Prior to the humble traybake it was the one-pot meal. Either way, I think it’s obvious to say people want simplicity in their lives. They want delicious, flavoursome food with little fuss or hassle. Thankfully, this spicy sausage and halloumi traybake more than delivers.

There’s only a few ingredients in this traybake – spicy sausage, halloumi, sweet potato and tomatoes – as well as a bit of seasoning of course. And truly, simplicity is the ultimate comfort food. Amazing flavours, perfectly balanced, without needing to spend hours slaving over a stove? I couldn’t conjure a more comforting thought.

When it comes to sausages, I think it positively wonderful that more variety and options are becoming more readily available. Not only are we able to experience more cultures, more flavours of the simple sausage, we have an absolute abundance of recipes awaiting us for them.

Sausages are so easy to cook, it makes the perfect ingredient to experiment with with little fear that anything could go wrong. And when it’s coupled with family favourites such as halloumi and sweet potato? You couldn’t ask for anything more.

Let’s talk ingredients…
Spicy Sausage: You will find any variety of spicy sausage at most delis, butchers or supermarkets. Make sure to purchase these according to your tastes – you don’t want to spoil your delicious traybake with something far too spicy!
Halloumi: Halloumi is a salty, Greek cheese. Many consider it quite rubbery, but when prepared properly, it has a soft, silky but firm texture.
Baby tomatoes: Baby tomatoes or cherry tomatoes are perfect for this recipe as they deliver an impactful mouthful of flavour with every bite. If you can’t find baby tomatoes, any smaller sized potatoes will work perfectly.
Garlic-Infused Olive Oil: This is available at most supermarkets, however should you find this unavailable, simply replace with normal olive oil mixed with a crushed clove of garlic.


We like our food on the spicy side. Spicy sausages are always a hit. This looks like an easy dinner for any night of the week. Leftovers would be great too.

The flavour combo in this tray-bake makes my mouth water. I wasn’t sure about cheese with sausage but the Halloumi cheese and it’s saltiness was perfect!

Chorizo would work so well in this! If you add chorizo, I highly recommend throwing in some diced chunks of orange – it may sound strange, but it’s a whole new flavour experience!
