Brisbane has definitely started to feel the bite of winter, which seems strange to say in the city of eternal summer. The nights are chilly, the mornings arrive wrapped in a layer of grey, and my flat, which is usually flooded with sunshine throughout summer, barely seems to catch a direct ray of light these days. Winter has officially arrived, and while some people reach for extra blankets and thick jumpers, I find myself reaching for soup. Big pots of soup that simmer away on the stove, fill the house with incredible smells, and warm you from the inside out. So I thought I’d share some of my favourite hearty winter soups – recipes that are comforting, satisfying, and perfect for making the most of soup season.

I always know winter has arrived when soup starts sounding better than almost anything else. Summer is all about quick meals, fresh salads, and finding excuses to stay out of the kitchen, but winter seems to invite slower cooking and heartier food. There’s something incredibly comforting about having a pot bubbling away on the stove while the weather outside does its best to convince you to stay indoors.

One of the things I love most about soup is how versatile it can be. Some days I want something wholesome and packed with vegetables, while other days call for rich, creamy bowls loaded with flavour. Then there are the soups with a bit of spice—those recipes that warm you up instantly and make cold evenings feel far more bearable.
