
Welcome to the world of my favourite spice blend: Za’atar seasoning!
If you ever make your way to Sydney, a must-visit place is Paddy’s Markets in Ultimo. Nestled alongside China Town, it is just a short walk from Central Station, and is a foodie’s heaven.

Paddy’s Markets not only has your typical market fare, but contains a large food market, otherwise unparalleled in Sydney. The bustling aisles offer fresh produce, better than anything you would find in a supermarket, alongside mounds and piles of spices.
There is a delightful intoxication to the aroma of fresh, untoasted spices. They are fragrant, and colourful, and are almost dizzying in their variety. When I lived in Sydney I would often frequent these market, and always made sure to try something new each and every time.

I first discovered Za’atar seasoning on one of these visits, at a time when I was spending much of my time researching and reading about Middle Eastern cuisine. I love Middle Eastern cuisine, with its abundant and unique flavours, and it’s incredible ease.
You would never guess foods as rich in flavour would be so easy to prepare in your own kitchen – and I think that’s why Middle Eastern dishes are popular, no matter where in the world you may find yourself.

Za’atar seasoning is a blend of herbs and spices, creating an aromatic yet piquant flavour. Originating from the Middle East, Zaatar is itself a herb similar to oregano and thyme. This herb is now considered a protected species, due to over-harvesting.
Originally, this Za’atar (the herb) was used to create Za’atar seasoning, however, these days most recipes tend to use either thyme or oregano in its place. Yet, Za’atar remains just as popular and iconic as the original.

When making this spice blend as with most spice mixes, although it may be tempting to skip toasting the spices, this is an essential step. Toasting spices releases the oils within the spice, which is what enhances the natural flavours.
And I am sure it goes without saying – make sure you don’t toast the herbs themselves!
Za’atar Seasoning Recipe
Za'atar Seasoning

Za’atar spice mix seasoning recipe - Zatar and Za’atar is a Middle Eastern condiment and spice mix great for adding a touch of spice and flavour to your dishes.
Ingredients
- 2 tbsp sesame seeds
- 2 tbsp oregano, ground
- 2 tbsp thyme, dried
- 2 tbsp sumac
- 1/4 tsp kosher salt
Instructions
- Lightly toast sesame seeds in a dry pan until golden.
- Add all ingredients to an airtight container, and shake to mix well.
