Knowing how to cook a recipe is one thing. Understanding why it works is something else entirely, and that’s where the real confidence in the kitchen comes from. Once you know why you rest meat before slicing it, why you salt pasta water until it tastes like the sea, why a cold pan and a cold egg make a completely different omelette to a hot pan and a room temperature one, everything changes. The recipes start to make sense in a way they didn’t before, and you stop following instructions blindly and start actually cooking.

These guides are built around the questions I get asked most often and the mistakes I made myself before I knew better. Nearly thirty years in the kitchen has taught me a lot, including which bits of received cooking wisdom are genuinely worth following and which bits you can safely ignore.
