The Little Recipes That Make Cooking Easier
Some recipes aren’t really meals at all. They’re the useful bits and pieces that make everything else you cook easier, better, or simply more convenient. I think of them as utility recipes. The things I like having tucked away in the fridge, freezer, or pantry, ready to save me a job later.
I’ve always been a big believer in making these things myself when it makes sense. Breadcrumbs from leftover bread, compound butters ready to melt over vegetables or steak, homemade sauces, stocks, seasoning blends, and other kitchen basics that can be prepared ahead and pulled out whenever you need them. It gives you more control over what goes into your food, but more importantly, it means you’ve already done half the work when it comes time to cook.
Utility recipes also make brilliant use of ingredients that might otherwise go to waste. Stale bread can become breadcrumbs, leftover herbs can become flavoured butter, and odds and ends in the fridge can often be turned into something genuinely useful. I find that deeply satisfying. If I can save myself money and make tomorrow’s dinner easier at the same time, I’m delighted.
