What I want is something fast, satisfying, and full of flavour, and nothing delivers on all three the way a good skillet recipe does. One pan, good ingredients, minimal fuss. That’s the brief, and every recipe on this list meets it.
Skillet cooking is also, I’d argue, one of the most underrated techniques in the home kitchen. The high heat caramelises and crisps things in a way that a gentle oven simply can’t, and cooking everything in one pan means the flavours build on each other in a way that feels much more considered than the effort involved. You get depth without the labour, which is essentially the goal of all weeknight cooking.

Persian Baked Lamb Kofta with Tangy Tomato Sauce Spiced lamb kofta finished in a bright, tangy tomato sauce that carries just enough acidity to cut through the richness of the meat. Deeply aromatic and genuinely special for a weeknight.
