I have a confession to make – I’m a grazer. As much as I love sitting down to a big bowl of pasta or soup, I tend to graze throughout the day. Especially busy days when I don’t have the luxury to sit down to eat! My snack food has to be high protein, tasty, and easy to make. And my favourite? My 10-minute lime and chilli roasted almonds.

At the beginning of each week, I make a batch of these and store them in an air tight container. Then, when it’s time for a snack-attack throughout the week, I can go and take what’s needed. And boy do they hit the spot!

Although in this recipe we roast the almonds, I like to use store-bought roasted almonds as opposed to blanched almonds. I find these have a rich and deep flavour. Adding the spices and roasting them a second time? Beautifully! They become deep and smoky, and coupled with the lime and chilli? Absolute perfection.

These roasted almonds are also the perfect treat for unexpected guests. When you have someone pop by, but nothing to offer, you’ll have these lime chilli roasted almonds hot from the oven in 10 minutes. That’ll definitely impress your guests!

We’re still in lockdown here in Scotland, with still no news when we’re able to go back to our offices. I honestly wish I had more to write about and to share but it’s difficult when we’re not doing much at all! At least there’s light at the end of the tunnel, and we’ll be out and about soon enough.

Ingredients

  • 200g Roasted Almonds
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp cayenne pepper
  • 1 tsp garlic salt
  • 1/2 tsp table salt

Instructions

  1. Preheat oven to 180C
  2. Mix together oil, spices and salt.
  3. Add almonds, and toss through until well coated.
  4. Transfer to a lined baking tray, and spread out into a single layer.
  5. Bake in the hot oven for 10 minutes, turning the nuts half way through.
  6. Remove from oven and allow to cool.
  7. Store in an air tight jar for up to a week.
