Homemade Caesar Salad Dressing

Ingredients

  • 4 anchovy fillets (oil-packed)
  • 3 cloves garlic, minced
  • 3 large egg yolks
  • 2 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 2 tablespoons olive oil
  • 25g Parmiaggiano Reggiano, grated (or other hard italian cheese)
  • 1/2 cup vegetable oil (I used rapeseed oil)
  • Salt & pepper, to season

Instructions

  1. In a small mixing bowl, use a hand blender to blitz together the anchovies, garlic, yolks, mustard and lemon juice until well combined.
  2. Add olive oil and blitz until smooth, about 1 minute.
  3. Next, blitz through the cheese until well combined.
  4. Slowly add the additional oil whilst blitzing the mixture, and continue to blitz for 1-2 minutes or until pale and has a smooth and creamy consistency.

Homemade Caesar Salad Dressing

Today I am sharing my creamy homemade Caesar salad dressing. Luxuriously thick, rich and velvety smooth, there’s something about homemade dressings that is the epitome of comfort. Whether it’s the fact you can customise them to your preference, or simply to results of a job well done, it’s a treat I’ve always enjoyed.

Now, many a soul may feel a bit overwhelmed by the thoughts of whisking by hand a homemade Caeser dressing to get that creamy rich texture. Personally, I’m not a purist and fully encourage the use of a stick blender for this. It takes a long and laboured task and makes it almost effortless.

There are dozens of variations of the Caesar salad, however it always involves a green salad topped with croutons. Although traditionally a romaine lettuce is used, when I took my photos below all that was available was mixed leaves! However, don’t let my verdant leaves and disastrous photography distract you from the creaminess of this sauce.

The great thing about Caesar dressing is it’s versatility. I love smearing the thick creamy dressing onto slices of toast, then topping it with chicken and bacon. Sounds simple, but it’s an incredibly tasty sandwich!
