I toss sausages, corn, peppers, onion, tomatoes, and garlic in a smoky chipotle marinade with cumin, paprika, lemon, and olive oil. Ingredients

  • 400g spicy sausages
  • 4 pieces of corn on the cob
  • 2 red peppers, roughly chopped
  • 6 cloves garlic, peeled
  • 100g cherry tomatoes
  • 1 red onion, roughly chopped
  • 2 tbsp olive oil
  • 1-2 tsp chipotle paste
  • 1 tbsp lemon juice
  • 1/2 tsp ground cumin
  • 1 tsp smoked paprika
  • Large pinch of salt

Instructions

  1. Preheat oven to 200C.
  2. In a large baking tray, spread out sausages, corn, tomatoes, peppers, onion and garlic.
  3. Mix together olive oil, lemon juice, spices, chipotle paste and salt and then pour over sausages and vegetables.
  4. Toss all ingredients together until well covered in the olive oil mixture.
  5. Transfer to the oven and bake for 45 minutes or until sausages and vegetables have started to turn golden.
