This spicy sausage and halloumi traybake is one of my weeknight go-tos. Everything roasts on one tray – sausages, chunks of golden halloumi, and a rainbow of veg – with a spicy kick that makes it far from boring. It’s hearty, comforting, and packed with flavour without needing a mountain of washing up. I love how the halloumi crisps up on the edges while staying gloriously soft inside. Perfect for lazy nights when I still want something delicious and satisfying.

Total Time 1 hour 10 minutes

Ingredients

  • 400g spicy pork sausage, diced
  • 250g halloumi, diced
  • 1 small sweet potato, diced
  • 250g baby tomatoes
  • 1 tsp oregano, dried
  • 1 tbsp garlic infused olive oil
  • Salt & Pepper

Instructions

  1. Preheat oven to 190C.
  2. In a large pot, cover the diced sweet potato with cold water with a large pinch of salt. Bring to the boil over high heat and boil for 5 minutes. Drain and set aside.
  3. Layer spicy sausage, halloumi, sweet potato, and tomatoes on a baking tray.
  4. Drizzle with garlic-infused olive oil and sprinkle with oregano.
  5. Toss all ingredients together and season with salt and pepper.
  6. Transfer baking tray to the preheated oven and bake for 30 minutes.
  7. Remove from oven and toss all ingredients, before returning to bake an additional 30 minutes.
  8. Allow resting for 5 minutes before serving.

Notes

Due to the tomatoes, you'll be left with a lovely juicy sauce at the bottom of the tray. I soak this up with some crusty bread once dinner is done!

Tray bakes have become a bit of a cultural phenomenon lately. Prior to the humble tray bake it was the one-pot meal. Either way, I think it’s obvious to say people want simplicity in their lives. They want delicious, flavoursome food with little fuss or hassle. Thankfully, this spicy sausage and halloumi tray bake more than delivers.

There’s only a few ingredients in this tray bake – spicy sausage, halloumi, sweet potato and tomatoes – as well as a bit of seasoning of course. And truly, simplicity is the ultimate comfort food. Amazing flavours, perfectly balanced, without needing to spend hours slaving over a stove? I couldn’t conjure a more comforting thought.

What I especially love about this dish is that it manages to feel hearty and wholesome while still being deceptively easy. It’s the kind of dinner I throw together after a long day, when I want something that feels like a hug but won’t make a mess of the kitchen. Plus, it’s full of colour – golden sweet potato, blistered tomatoes, crispy sausage and that dreamy, chewy halloumi. It’s cosy, satisfying, and exactly what I want at the end of the day.

And sure, that has its place – I’m not knocking a buttery pile of mash and onion gravy – but it’s nice to see sausages branching out and getting a bit of a glow-up. Spicy chorizo, smoky andouille, herby Italian sausages… the list goes on, and it’s a beautiful thing.     We like our food on the spicy side. Spicy sausages are always a hit. This looks like an easy dinner for any night of the week. Leftovers would be great too.

    The flavour combo in this tray-bake makes my mouth water. I wasn’t sure about cheese with sausage but the Halloumi cheese and it’s saltiness was perfect!

      Chorizo would work so well in this! If you add chorizo, I highly recommend throwing in some diced chunks of orange – it may sound strange, but it’s a whole new flavour experience!
