The Best Chicken Salad Recipe with Casesar Dressing and Croutons

A gorgeously tasty chicken salad that will impress even the fussiest of eaters.

Ingredients

Chicken

  • 400g chicken, diced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp onion granules
  • 1/2 tsp garlic salt
  • 1 tsp mixed herbs

Croutons

  • 60g bread, diced
  • 1 tbsp olive oil
  • sea salt flakes

Salad

  • 1 gem lettuce, chopped
  • 1 cucumber, finely diced
  • 1 carrot, grated
  • 250g cherry tomatoes, cut into quarters
  • 50g Pecorino cheese, grated (or other hard Italian cheese)
  • 4 tbsp caesar salad dressing

Instructions

Chicken

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
  2. Toss the chicken through the herbs, spices and lemon juice, before transferring to the hot skillet.
  3. Cook for 7-8 minutes or until the chicken is cooked through and turning golden in colour.
  4. Remove from heat and set aside.

Croutons

  1. Preheat the oven to 200C.
  2. Toss the diced bread through 1 tbsp of olive oil and a large pinch of sea salt.
  3. Transfer the diced bread to a baking tray, and bake in the hot oven for 10-12 minutes, or until the croutons are golden and crunchy.
  4. Remove from heat and set aside.

Salad

  1. Toss the tomatoes through 1 tsp of table salt and set aside in a fine sieve for 10 minutes to allow any excess juice to drain off. Discard the juice.
  2. Toss together the lettuce, cucumber, carrots, tomatoes, Pecorino cheese, and caesar salad dressing until well combined.
  3. Divide between four bowls, and top with chicken and croutons before serving.

The Best Chicken Salad Recipe

I will never deny being a creature of habit and loving my creature comforts. And when I find a recipe that is quick, easy, and thoroughly comforting, you can guarantee it’ll become a weekly staple in my home. This gorgeously easy chicken salad with golden, crunchy croutons and caesar dressing is a classic example of this. It is my not-so-guilty pleasure.

In my house, this is called our “Monday Salad”. A quick chicken salad to kick off the week after a weekend of dinner parties or roast dinners. It helps us reset our minds, and alleviates some of the guilt of the weekend’s festivities. And although most people don’t equate Salads with Winter, this creamy chicken salad is the perfect cold-weather treat, thanks to the croutons and perfectly seasoned chunks of chicken.

Now, let’s talk about how terrible this photo is! I am currently testing out a new set-up for my photos, which, let’s be honest, have been rather uninspired lately. And although I am not particularly happy with this photo, it is what it is. I forgot to make a few changes to my lighting arrangement, and my camera was also misbehaving. So trust me when I say this chicken salad looks nicer in reality than it does in this picture!

I’m also not the greatest fan of this backdrop, so will be going back to my older, white wooden backdrop. My kitchen benches are actually brown and reflect light quite terribly, so I need to use backdrops for my photography. One of those necessary evils, unfortunately. I wish I could have a grand photography set up like some of the great food bloggers, but my flat simply doesn’t allow the space. So I have to make do with what I have!
