I was diagnosed with coeliac disease when I was 22, and it has definitely changed the way I cook. Back then, gluten-free options were nowhere near as good as they are now, and a lot of meals seemed to rely on expensive specialty products that never quite tasted right. Over the years, though, I’ve learned that great gluten-free cooking isn’t really about replacing gluten. It’s about building flavour in other ways. Good ingredients, plenty of seasoning, and recipes that were already naturally gluten-free or can be adapted with a simple swap. Although every single recipe on this blog can be made gluten-free, these are the fifteen dinners I come back to again and again when I want to prove that gluten isn’t needed when all you want is flavour.

Gluten-Free Cooking Without the Fuss

One of the biggest misconceptions about gluten-free cooking is that it has to be complicated. People often assume it means hunting down specialty ingredients, making everything from scratch, or settling for meals that are somehow less satisfying than their gluten-filled counterparts. My experience has been the complete opposite. Some of the most flavour-packed meals I make just happen to be gluten-free, and nobody around the table notices or cares. They’re too busy asking for seconds.

Over the years, I’ve naturally gravitated towards recipes built around meat, vegetables, rice, potatoes, legumes, herbs, and spices. Mediterranean cooking, Middle Eastern cooking, curries, soups, stews, and slow-cooked dishes have all become staples in my kitchen because they deliver incredible flavour without relying on gluten. When a recipe does traditionally contain gluten, it’s often as simple as swapping soy sauce for tamari or choosing a gluten-free stock. Small changes can make a huge difference.

The recipes in this collection are some of my absolute favourites. They’re hearty, comforting, full of flavour, and perfect for feeding family and friends who would never guess they’re eating gluten-free food. Whether you’re coeliac, gluten intolerant, or simply looking for dinner inspiration, these recipes prove that gluten-free cooking doesn’t have to feel restrictive.
