Coconut Chicken Curry

Coconut chicken curry is one of my go-to weeknight dinners – rich, flavourful, and surprisingly simple to pull together. I simmer tender chicken in a creamy coconut milk base with garlic, ginger, and warm spices like turmeric and cumin. It’s gently spiced, beautifully aromatic, and perfect over rice or with warm naan. The balance of creaminess and spice makes it comforting without being heavy – a dish I come back to again and again for cosy, satisfying meals.

Ingredients

  • 500g chicken breast, diced
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp chilli, minced
  • 1 tsp fenugreek, ground
  • 1 tsp cumin, ground
  • 2 tsp coriander, ground
  • 1/2 tsp mustard, ground
  • 1 tsp garam masala
  • 1 1/2 tsp caster sugar
  • 400ml coconut milk
  • 1 red pepper, sliced
  • 1 tsp lemon juice
  • 1/2 tsp lime juice

Instructions

  1. Heat oil over medium heat in a large skillet. Cook onions 5-10 minutes, or until just turning soft.
  2. Add garlic and chilli to the onions, and cook addition 1-2 minutes.
  3. Next, add the fenugreek, cumin, coriander, mustard and garam masala to the onion. Cook 1-2 minutes or until fragrant and well combined.
  4. Add the chicken and increase heat to medium-high, cooking for 5 minutes or until chicken is coated in the spice mix and just cooked on all sides.
  5. Stir through the coconut milk, and reduce heat to low. Simmer uncovered for 10 minutes.
  6. Add red peppers and sugar, and simmer an additional 5 minutes.
  7. Finally, remove from heat and stir through the lemon juice and lime juice. Season with salt.
  8. Serve with a sprinkling of chopped coriander and steamed basmati rice.

Pantry-Inspired Dinner Solution

The other night, whilst pondering what to make for dinner that doesn’t require a trip to the supermarket. I was not in the mood for queues and empty shelves yet again – thanks Covid! Anyway, I found a long-forgotten tin of coconut milk in the pantry, and given I had some chicken on hand and a red pepper that’s nearing its end, I knew there’s only one thing for it – my Coconut Chicken Curry.

It’s the perfect blend of sweet and spice (with a hint of sour), and I love how easy it is to pull together using pantry staples. It may look like a long list of ingredients, but it’s mostly spices – nothing fancy, just the usual suspects that tend to live in the cupboard anyway. I throw it all in a pan, let it bubble away, and dinner basically makes itself. It’s a proper comfort dish without being heavy, and I always forget just how much I love it until I make it again.

I’m especially grateful for it tonight. One of those meals that feels like the world isn’t falling apart. And right now, the world needs a few more recipes like this, especially as things feel so uncertain and unsettling.

What Utter Chaos Have We Found Ourselves In?

I feel like it would be remiss not to acknowledge the current global chaos. The coronavirus is already affecting our family, though thankfully only mildly, although I am still strugging a bit with my recovery. We have doctors in the family, and we’re doing our best to support each other emotionally and mentally. Even so, it’s a lot. The last couple of weeks have been filled with anxiety, unknowns, and that general unease that creeps in during times of crisis.

With self-isolation and quarantine in full swing, the days blur together. The supermarkets are either low on stock or out of stock completely, and that alone is enough to make anyone panic. Thankfully, I’m someone who can make do with what’s on hand. So when I walk into the shops and see the empty shelves, I make do, I figure it out, I pivot, and I don’t complain. It’s a stark reminder that things aren’t normal, and might not be for a while.

So meals like this – simple, hearty, adaptable – become a bit of a lifeline. They ground me. They remind me that even if everything else is changing, I can still find a little joy and stability in the kitchen. And maybe that’s what we all need right now. A bit of comfort. A bit of normal.

Mindful Meals and Shared Resources

We’re doing our best to buy not just what we can, but what we genuinely need right now. It’s a delicate balance between keeping ourselves nourished and making sure we’re not hoarding or taking away from others who may need it more. I’m mindful of the elderly and immunocompromised members of our community who might not have the same access or options. So I try to keep things simple, and keep things sensible. No toilet paper hoarders here!

My coconut Chicken Curry fits that mindset beautifully. It’s not flashy, but it’s full of flavour. It uses ingredients that are easy to find (or substitute), and it doesn’t rely on anything fresh beyond a pepper and some chicken. And honestly, even those can be swapped out for whatever’s on hand. The sauce is the star, and when you’re working with a strong foundation like that, it’s easy to adjust and adapt without feeling like you’re missing out.

This recipe also gives me a reason to pause. To slow down. Cooking becomes less of a chore and more of a ritual. I stir the pot slowly, let the spices mingle, and breathe deeply while it simmers. And maybe that’s what I need right now – not just food, but a moment of calm. A reminder to be thoughtful and present, even if everything else feels out of control.

Ingredients Breakdown

Chicken breast is the base here – it’s lean, reliable, and easy to chop into bite-sized chunks that soak up every bit of flavour. I heat a splash of vegetable oil in the pan before softening some sliced onion. The garlic and chilli go in not long after, just enough to release that warmth and heat without overwhelming everything else.

Then come the spices – ground fenugreek, cumin, coriander, mustard, and garam masala. I know it sounds like a lot, but this is what builds all the depth in the curry. I also add a little sugar to balance things out. The whole lot mingles and toasts for a minute before being brought together with creamy coconut milk and a squeeze each of lemon and lime juice.

Finally, I throw in sliced red pepper to add a pop of colour and just the right amount of sweetness. Everything simmers down into a velvety, fragrant curry that feels more luxurious than it has any right to. It’s all pantry staples and fridge basics, but together they work a bit of midweek magic.
