Honey Lemon Salmon with Tenderstem Broccoli
Honey lemon baked salmon with tenderstem broccoli is one of my favourite quick dinners. The salmon is coated in a simple glaze of honey, lemon juice, and garlic, then baked until just flaky. I roast the broccoli alongside so it’s tender with a bit of char – no fuss, one tray, and loads of flavour. It’s light, balanced, and perfect for weeknights when I want something wholesome without a lot of effort. A fresh, easy recipe that always feels like a little reset.
Ingredients
- 500g salmon side
- 100g tenderstem broccoli (broccolini)
- 50g butter
- 3 cloves garlic, minced
- 1 tbsp runny honey
- 1 tbsp fresh dill, chopped
- Juice of half a lemon
- pinch chilli flakes
Instructions
- Preheat oven to 190C.
- Place the salmon skin-side down in a baking dish, and lay the tenderstem broccoli over the salmon.
- In a small pot, melt the butter over low heat. Add the honey, lemon, garlic, dill and chilli flakes and heat through.
- Pour the sauce over the salmon.
- Transfer the salmon to the hot oven for 20-25 minutes or until cooked through.
