No Bake Chocolate Peanut Butter Slice

No Bake Baking
I love baking. The precision, the science, the transformation of humble ingredients into something decadent and delicious. It’s deeply satisfying, and as a self-confessed science nerd, it absolutely tickles my fancy. But even I can admit that there are days when the thought of preheating an oven or weighing out flour to the nearest gram feels like just too much effort. That’s where no bake baking comes in – and this No Bake Chocolate Peanut Butter Slice recipe is exactly the sort of thing I turn to. It’s indulgent, it’s foolproof, and best of all, it gives you all the smug satisfaction of having “baked” without actually doing so.
The beauty of no bake baking is how low-stress it is. You can throw it together in ten minutes flat, let the fridge do the rest, and you’ll still end up with something that tastes like you’ve put in far more effort than you actually have. It’s ideal when your energy is low but your cravings are high. Better still, you’ve got full freedom to customise to your liking – a different biscuit base, a cheeky swirl of caramel, a fancy sprinkle of sea salt on top. The rules are relaxed and so is the vibe.
I used a good-quality peanut butter for this one because it really makes a difference to the final flavour. The better the ingredients, the better the slice. Whether you go full chocolate biscuit or gluten-free alternative, you’ll end up with something utterly delicious. And honestly, isn’t that the goal?

The Archive Project
One of the funniest things about having been food blogging for as long as I have is the sheer number of recipes I’ve collected along the way. My archives are wild. Half of them are tucked away on Blogger, and the other half are in an old Word doc I made for my friends back in the day. It’s a complete mess but I adore it. Going back through these recipes now feels like flipping through an old diary – filled with sweet (and often chaotic) memories and some seriously tasty discoveries.
This chocolate peanut butter slice is one of those nostalgic recipes from almost ten years ago. It made the cut into the archives for good reason – it’s rich, indulgent and wildly popular every time I make it. I’ve been slowly bringing these old recipes back to life, photographing them properly, tweaking where needed, and giving them the love they deserve. It’s tedious work, but worth every second. It feels like a warm hug from my past self.
This week I dug out the recipe again ahead of visiting family for Easter. I wanted to make something especially for my dad, who’s not been feeling the best lately. Chocolate and peanut butter are two of his favourites, and I figured this slice would be a good way to put a smile on his face. It certainly did the trick – and even though I don’t have much of a sweet tooth myself, I can appreciate the joy it brings to others. Especially when there’s zero oven time involved.

Stress and Anxiety: Work Sucks
The past week has been a lot. I’ve been juggling work, life, and a bit too much drama for my liking. People being difficult, decisions being delayed, and frankly, I’m feeling a little over it. When everything outside feels noisy and stressful, I retreat to my kitchen. It’s small – tiny even – but it’s my sanctuary. When I’m chopping, stirring or plating up something delicious, the rest of the world just fades away. Even if Alexa refuses to set a timer properly.
I don’t believe for a second that you need a big, beautiful kitchen to create amazing food. My little kitchen might be a tight squeeze, but it still delivers big flavours. It’s proof that cooking isn’t about size or flashiness. It’s about intention. When I’m in there, it’s just me, the ingredients, and whatever mood I’m trying to cook my way out of. It’s calm, it’s mindful, and it always leaves me feeling a little more like myself again.
Cooking, especially baking, has become one of my best tools for managing stress. It’s a distraction that actually creates something – which is more than I can say for half the emails I deal with each week. There’s something incredibly grounding about turning a messy bench and a handful of pantry items into something comforting and tangible. And when all else fails? Chocolate and peanut butter will always have your back.

Ingredients Breakdown
This no bake chocolate peanut butter slice is as straightforward as it gets. The base is made from double chocolate chip biscuits combined with melted salted butter to create a rich, chocolatey layer that sets up beautifully in the fridge. It’s firm, sweet and indulgent – the perfect foundation for what comes next.
The peanut butter filling is where the magic happens. A creamy blend of smooth peanut butter, salted butter, brown sugar, icing sugar, and just the tiniest pinch of sea salt flakes makes for a luscious, fudgy centre. It’s sweet, slightly salty, and full of that nostalgic peanut butter richness that makes it near impossible to stop at just one piece.
The final flourish is a glossy chocolate topping made from dark chocolate melts, a splash of milk, and a generous helping of unsalted butter. Once it’s set and finished with a light dusting of cocoa powder, you’ve got yourself a slice that’s as beautiful as it is decadent. No bake baking at its absolute finest.
