
Proper Garlic Bread (with roasted garlic)

Ingredients
- 1 bulb garlic, top sliced off to expose the bulbs
- 1/2 tbsp olive oil
- 1 sourdough baguette, cut in half and sliced lengthways
- 50g salted butter, softened
- 25g fresh flat laf parlsey, roughly chopped
Instructions
- Preheat oven to 200C.
- Drizzle the garlic bulb in olive oil, and then wrap in foil.
- Rost the garlic in the hot oven for 45 minutes. Remove and set aside to cool.
- Once cooled, squeeze the roasted garlic into a bowl and add the soft butter. Use a fork to mix the two together until well combined.
- Lightly toast the bread on each side until golden brown.
- Spread the garlic butter on one side of each piece of toasted bread. Next, place the bread halves buttered sides together (like a sandwich), and wrap them in foil.
- Cook the wrapped baguette slices in the hot oven for 15 minutes.
- Remove from the foil, sprinkle with fresh parsley and serve.

Proper Garlic Bread
Spaghetti is a regular feature on our weekly meal plan, and as we all know – you can’t have spaghetti bolognese without garlic bread! However, we don’t just do any old plain and boring toast. In our house, we make proper garlic bread!
This proper garlic bread is for people who don’t want boring toast with their bolognese, or whatever else they may be serving. Though this recipe is tasty enough you’d happily eat it by itself! Sure, roasting garlic may seem a little labour-intensive, but it takes less than a minute to prepare, and once it’s in the oven? You don’t need to keep an eye on it until it’s ready. And I always use salted butter in my recipes simply because it adds so much flavour. Who doesn’t want flavour?

But recipes aside, autumn is finally here! I love the cooler weather and it always inspires my kitchen and cooking. Soups and stews are my favourites of course. However, I did just buy a new stand mixer so plenty of sweet treats should soon be forthcoming! And I have so many different ice cream flavours on my list to make too. This week I plan to try out some chocolate ice cream! I’m also making some cheese and bacon muffins for a friend, so hopefully, you’ll see that recipe here soon too.
What else am I planning to cook? Well, with Christmas coming sooner rather than later, I need to focus on Christmas side dishes. These are easy enough as they’re the special sides you’d not usually make alongside a Sunday roast, such as braised cabbage, or maple roasted parsnips!. You can imagine, in my home, every dinner is a little bit special. Especially when my proper garlic bread is on the menu!
