- 4 slices of sourdough bread, lightly toasted
- 100g ricotta
- Juice of half a small lemon
- 4 tbsp sundried tomato pesto
- 75g prosciutto
- Small bunch of basil
- Salt and pepper, to taste
- Mix together the ricotta and lemon juice and season with salt and pepper.
- Spread the ricotta mixture onto the prepared toasted sourdough.
- Net, top with sundried tomato pesto, prosciutto and torn basil leaves.
- Serve whilst the toast is still warm.

Yesterday marked a special day for me. It has been a year since I first saw one of my favourite people across a crowded room. That encounter has had a deep impact on my life and I would have loved to be able to celebrate it with that person, however, they are currently living in another city.
As it turns out I’m mildly sentimental!
So instead, I treated myself to the ultimate indulgence with this ricotta, sundried tomato pesto and prosciutto bruschetta brunch at home! Brunch is one of my all-time favourites, and Bruschetta is my absolute go-to. This easy recipe is an absolutely delicious addition to my repertoire!
I had made some sundried tomato pesto in the morning using up some leftover sundried tomatoes from my Mediterranean pasta and focaccia recipes. And I knew that to create a perfect bruschetta, pesto had to be used – and of course, it did not disappoint!
Ricotta is an acquired taste, so we’ve added a hint of lemon juice, salt, and pepper to its creamy texture. Amazingly, this combination pairs perfectly with the boldness of pesto and saltiness of prosciutto – it’s a match made in heaven!
Pots and Pans
Relocating back to Australia from abroad has its challenges; I’ve had to start my kitchen from the beginning. Buying pots, pans and baking trays is a never-ending task, and sometimes I still find myself struggling to find some basic necessities.
I have a craving to bake a delicious pasta dish, yet I do not have the ideal baking dish for it. Furthermore, I am missing a dish suitable for lasagne and trays for preparing easy one-pan dinners! Most distressingly, I lack the essential cast iron skillet!
The only thing standing between me and all the things I need for my home is my inability to drive. I have a medical condition which prevents me from getting a driving license and so, shopping for everyday items like pots, pans and other homewares becomes incredibly challenging as delivery is my only option.
However, here in Australia, it’s almost impossible to get things delivered on a Saturday unless you have Amazon Prime! And after writing this up, I now have a cast iron griddle on its way via Amazon!
It’s my 40th birthday next Sunday, and I’m rather looking forward to it. Turning 40 is a milestone in life and I want to make sure that I celebrate it in the best way possible. This is why I am planning an exciting adventure for the weekend.
I don’t want to just stay at home and eat cake by myself, so I am going to take a trip down to the beach, go to a crystal fair on Sunday, and spend some quality time with my family on Saturday. It will be an unforgettable experience that will help me mark this special occasion.
Because I’ll be out and about for the weekend, however, it does mean there’ll be no new recipes next weekend – I simply won’t have the time! I will be cooking though, no doubt. I plan to make my family an Indian-inspired feast to help me celebrate. After which we’ll indulge in my traditional ice cream cake!
I’m not a fan of normal cake, so ice cream cake it always is!
