Ingredients

  • 125g cherry tomatoes
  • Small handful of fresh basil (about 5g)
  • 1 clove garlic, crushed
  • 1 tbsp extra virgin olive oil
  • 10g Grana Padano (or other hard Italian cheese), grated
  • Large pinch of sea salt flakes
  • 100g dried pasta, cooked al dente

Instructions

  1. Cook the pasta according to packet instructions until al dente. Reserve a small splash of pasta water before draining.
  2. While the pasta cooks, add the cherry tomatoes, basil, garlic, olive oil, Grana Padano, and sea salt to a mini chopper or NutriBullet. Blitz until well combined but still a little chunky.
  3. Toss the hot pasta through the sauce, adding a splash of pasta water to loosen if needed, and serve immediately.

Notes

  • This is the ultimate lazy lunch. No cooking, no washing up a saucepan, just fresh ingredients blitzed together and tossed through hot pasta. The heat of the pasta warms the sauce through perfectly.
  • Use the ripest, most flavourful cherry tomatoes you can find. This sauce has nowhere to hide, so the quality of the tomatoes is everything.
  • Raw garlic gives this sauce a fresh, punchy flavour. If you prefer something milder, use roasted garlic or confit garlic instead. It'll add a sweeter, softer garlic flavour without overpowering the tomatoes.
  • A mini chopper or NutriBullet is ideal here. You want a chunky, rustic consistency rather than a smooth puree, so pulse rather than running it continuously.
  • A splash of pasta water is the secret to getting the sauce to cling to the pasta. The starch in the water emulsifies the oil and helps everything come together beautifully.
  • Fresh basil is essential. Dried basil won't give you the same bright, vibrant flavour.
  • Grana Padano is slightly milder and more budget-friendly than Parmigiano Reggiano, but both work brilliantly. Pecorino is also lovely if you want a sharper, saltier kick.
  • This sauce works best with long pasta like spaghetti or linguine, or short shapes like penne or fusilli that can trap the chunky sauce in their ridges.

I’ve been meaning to post this no-cook tomato pasta sauce for months. In fact, when I went back through my notes, I realised I first wrote the idea down (inspired by Poh Ling Yeow‘s recipe) when I was still living in Adelaide, which means it has somehow taken me almost a year to get here. Once again, life distracted me, the recipe slipped down the list, and something that takes less than a minute to make took nearly twelve months to reach the blog. Very on brand, really.

The sauce is best fresh, right after blitzing, when the basil is vibrant and the tomatoes are at their most flavourful. Once it sits it starts to oxidise and the basil turns dark. Make the pasta, blitz the sauce, toss, and eat.

Can I use dried basil? No. Dried basil has a completely different flavour to fresh and won’t give you the bright, vibrant result that makes this sauce worth making. Fresh basil is one of only five sauce ingredients and it’s doing a significant portion of the flavour work. If you don’t have fresh basil, this isn’t the recipe for today.

Why do I need to save pasta water? The starchy pasta water is what helps the sauce cling to the pasta rather than sitting in a pool at the bottom of the bowl. A small splash added when tossing emulsifies the olive oil and brings everything together into a cohesive sauce that coats every piece of pasta properly. It’s a small step that makes a noticeable difference.

Ingredient breakdown

Cherry tomatoes

The foundation of the sauce and the ingredient that matters most here. This is a five-ingredient no-cook sauce with nowhere to hide, which means the quality of the tomatoes is directly reflected in the finished dish. Use the ripest, most flavourful cherry tomatoes you can find. Pale, flavourless tomatoes will give you a pale, flavourless sauce regardless of what else goes in with them.

Fresh basil

A small handful blitzed in with everything else, which distributes the bright, herbal flavour through the entire sauce rather than just sitting on top as a garnish. Fresh basil only. Dried basil has a completely different flavour and won’t give you the same vibrant result in a raw sauce like this one.

Garlic

One clove, crushed, which is the right amount for a single-serve sauce where raw garlic can easily become the dominant flavour if you overdo it. Raw garlic is considerably more pungent than cooked, so resist the urge to add more. One clove gives you a clean garlic presence without overwhelming everything else.

Extra virgin olive oil
