I grew up in Liverpool, Sydney, which, despite its rather unfair reputation, is one of the best places in Australia to grow up if you love good food. Nobody who grew up there could ever accuse the area of lacking flavour. Chinese, Vietnamese, Lebanese, Greek, Italian, Turkish, Balkan, and countless other cuisines all sit side by side, becoming part of everyday life whether they’re in your family tree or not. My dad regularly brought home fresh bread rolls from the local Vietnamese bakery after finishing pest control jobs, and my best friend from primary school now runs a Vietnamese bakery herself. Every weekend Mum and I would share a giant döner kebab from our favourite shop. The owner knew our names, knew our order, and usually had it started before we’d even reached the counter. Liverpool is the cultural food hub of Western Sydney, and I’ll happily defend that opinion forever. It’s exactly why Mediterranean food has always felt so natural to me, and why these are the dinners I turn to when I want maximum flavour without spending all evening in the kitchen.

Growing Up Around Incredible Food

Looking back, I don’t think I realised how lucky I was. Growing up surrounded by so many different cultures meant I never thought of food as being limited to one style of cooking. One night we’d be eating Lebanese charcoal chicken, another we’d have Vietnamese bread rolls, then maybe Italian pasta or Greek souvlaki the following weekend. It wasn’t something that felt unusual. It was simply normal life in Western Sydney, where incredible food was never more than a few minutes away.

That upbringing shaped the way I cook today. I naturally reach for olive oil, lemon, garlic, herbs, tomatoes, olives, feta, paprika, oregano, and all the flavours that remind me of those neighbourhood restaurants and family-run takeaway shops. Mediterranean cooking manages to be both comforting and fresh at the same time, and that’s probably why I never seem to get tired of it. Even the simplest dinners feel colourful, generous, and full of life.

These recipes are exactly the sort of meals I rely on during busy weeks. They’re packed with flavour, simple enough to cook after work, and satisfying enough that nobody ends up rummaging through the pantry an hour later looking for snacks. That’s always a sign of a successful dinner in my house.
