Chicken Traybake with Tomato and Feta

Try this chicken traybake with feta, olives and tomatoes for a tasty (and easy) family dinner with a flair of the Mediterranean. A tasty and easy sheetpan dinner recipe.

Ingredients

Chicken Marinade

  • 500g chicken breast fillets
  • 1 tbs olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 2 tsp lemon juice
  • 1/2 tsp salt

Traybake

  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • pinch sea salt
  • 250g potatoes, diced
  • 100g shallots, cuts and bottoms sliced off
  • 6 cloves garlic
  • 4 tomatoes, cut into quarters
  • 50g black olives
  • 100g feta cheese, diced or crumbled
  • 4 slices of preserved lemon

Instructions

Chicken Marinade

  1. Marinade the chicken breast fillets in the olive oil, smoked paprika, garlic powder, salt and lemon juice for one hour.

Traybake

  1. Preheat oven to 200C., and line a sheet pan or baking tray with greaseproof paper.
  2. Toss the diced potatoes, shallots and garlic cloves through the olive oil, paprika and a pinch of sea salt. Transfer to the prepared tray, and bake in the hot oven for 30 minutes.
  3. Remove the tray from the oven, and add the marinated chicken, tomatoes, olives, feta cheese, and preserved lemon. Season with a small amount of sea salt, and black pepper.
  4. Return to the oven and bake an additional 30 minutes, or until the chicken is cooked through.

Chicken Traybake with Feta, Olives and Tomato Recipe

Traybake or sheet pan dinners are an incredibly easy dinner option. So much so that they’re really fun to experiment with. Today’s chicken traybake recipe was thrown together, deliciously so, to use up some feta, olives and tomatoes I had left over from the previous night’s pizza. Add in some garlic, potatoes and shallots and we had a really tasty traybake dinner, bursting with Mediterranean flavours.

Feta, olives and tomatoes are such a wonderfully rich flavour combination. I particularly love baked feta, where the edges turn golden and crisp. I mentioned above that I add these to homemade pizzas! My favourite homemade pizza toppings are mozzarella, feta, pepperoni and olives on a base with plenty of tomato pizza sauce. It’s honestly heavenly! I highly recommend giving this topping a try next time you have pizza.

Pizza aside, lately dinners have had to be easy in our house. My health hasn’t been the best over the past few months and my cooking has unfortunately suffered. I caught Covid-19 back in March, and have never quite recovered. Turns out that although the virus dies within a few weeks, the damage it does can last a for while afterwards. So please, be careful!

Thankfully, tut throwing together a chicken traybake for dinner is an incredibly easy option and takes very little effort. All you need to do for this recipe is marinate some chicken, then add things to the tray and pop them in the oven. You can’t make it any easier than that really! All the flavours come together seamlessly for a thoroughly and deliciously easy dinner.

On a final note, feel free t spread this across two baking trays if necessary. Just remember to swap shelves halfway through cooking!
