
February was a hectically busy month, and I can’t be sure exactly where the time went! We did have the good fortune though of travelling to Fort William for a wee break. The night before I was hardly in the mood to cook anything particularly extravagant (due to the other chores I was up to such as packing!). As such, I made these deliciously tasty spicy baked chicken wings for a quick and easy treat.

Served alongside my homemade ranch dipping sauce, these spicy baked chicken wings have all the flavour and crunch you’d expect from a chicken wing. Though due to being oven baked they’re a much healthier, cleaner and easier option.
My pet peeve when deep-frying anything is the muss and fuss it makes. It’s also incredibly time-consuming! Wings baked in the oven on the other hand, well, they require very little attention at all! Perfect for when you want a simple treat meal before a weekend away.

After the chores were completed, we were able to sit back and relax with these spicy baked chicken wings. Taking a short cut, we served them with some hot chips from the local chippy! Then we settled in for a few good movies worth curling up to. It was a great way to spend the evening prior to a very long drive the next day!

Our adventure to Fort William was a lovely little trip away, and the small town was a complete winter wonderland. During the drive north, we passed many a loch, snow-capped mountains. We also drove through what I would describe a snow storm! Honestly, the highlands of Scotland are so scenic, peaceful and serene. I highly recommend visiting them, should you ever have the opportunity.

Let’s talk Ingredients…
Chicken Wings: These are cheap and cheerful, and typically come jointed. If not, you can bake them as is. Alternatively, use a sharp knife between the bones to divide them into pieces.
Rapeseed Oil: I used Scottish Rapeseed oil as it is a much healthier oil compared to Olive. However, should you not have Rapeseed oil available to you, then olive oil is a perfectly acceptable alternative.
Herbs & Spices: These herbs and spices are a wonderful combination that create a perfectly spicy and crunchy chicken wing without being too hot, or too overwhelming. Of course, if you feel they spice mix required a little bit more of this or that, then experiment to your hearts contentment!
Ranch Dipping Sauce: I use my Homemade Ranch Seasoning to make my Ranch Dipping Sauce as I find it far tastier than anything you can buy in a supermarket.

Spicy Baked Chicken Wings

Spicy oven-baked chicken wings, packed full of flavour and perfectly crispy - without the mess of a deep fryer!
Ingredients
Spicy Baked Chicken Wings
- 1 kg chicken wings
- 1/4 cup rapeseed oil
- 1/4 cup plain flour
- 1 tbsp paprika
- 1 tsp cumin
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp onion flakes
- 1 tsp garlic salt
- 1/2 tsp mustard powder
- 1/4 tsp cayenne pepper
- 1/4 tsp table salt
Ranch Dipping Sauce
- 300ml sour cream
- 2 tbsp homemade ranch seasoning
- 2 tbsp mayonnaise
Instructions
Spicy Baked Chicken Wings
- Preheat oven to 200C. Line two oven trays with aluminium foil.
- Combined oil, flour, herbs and spices in a bowl and mix well.
- Add chicken wings and toss through spice mix until well coated. Sit to marinate for 30 minutes.
- Transfer spice coated wings to prepared oven trays. Place trays on separate oven shelves and bake for 20 minutes.
- Remove wings from the oven, and turn each wing over, using tongs. Return to oven, swapping shelves (bottom tray now on top, top tray now on the bottom.)
- Increase temperature to 220 and bake an additional 20 minutes.
- Remove from oven and cool for five minutes prior to serving with ranch dipping sauce.
Ranch Dipping Sauce
- Mix together all ingredients in a bowl, and serve alongside spicy baked chicken wings.

Tasty chicken wings and ranch sauce sounds like the perfect combination for a very tasty meal. The wings look deliciously crispy and I much prefer that they aren’t deep fried. This is the kind of food I enjoy at the weekend, with my favourite catch up TV and a cold bottle of beer.
These are perfect with an ice cold brew!
