Spicy Baked Chicken Wings

Spicy baked chicken wings are my go-to for game nights, lazy dinners, or anytime I’m craving something bold and punchy. I toss the wings in a simple but fiery spice mix, then bake until golden, crispy, and sizzling. No deep fryer needed – just big flavour, crispy skin, and juicy meat. I usually serve them with a cool dip and plenty of napkins. Whether it’s a crowd or just me on the sofa, these wings hit the spot every single time.

Ingredients

Spicy Baked Chicken Wings

  • 1 kg chicken wings
  • 1/4 cup olive oil
  • 1/4 cup plain flour
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp onion flakes
  • 1 tsp garlic salt
  • 1/2 tsp mustard powder
  • 1/4 tsp cayenne pepper
  • 1/4 tsp table salt

Ranch Dipping Sauce

Instructions

Spicy Baked Chicken Wings

  1. Preheat oven to 200C. Line two oven trays with aluminium foil.
  2. Combined oil, flour, herbs and spices in a bowl and mix well.
  3. Add chicken wings and toss through spice mix until well coated. Sit to marinate for 30 minutes.
  4. Transfer spice coated wings to prepared oven trays. Place trays on separate oven shelves and bake for 20 minutes.
  5. Remove wings from the oven, and turn each wing over, using tongs. Return to oven, swapping shelves (bottom tray now on top, top tray now on the bottom.)
  6. Increase temperature to 220 and bake an additional 20 minutes.
  7. Remove from oven and cool for five minutes prior to serving with ranch dipping sauce.

Ranch Dipping Sauce

  1. Mix together all ingredients in a bowl, and serve alongside spicy baked chicken wings.

February Escapes and Easy Dinners

February is one of those months that disappears in the blink of an eye. One moment it’s New Year, and the next you’re elbow-deep in laundry and wondering how it’s almost March. I honestly don’t know where the time went. That said, we did manage to sneak in a little break to Fort William, which was very much needed. But the night before we left, in the middle of trying to pack and get everything ready, I really wasn’t in the mood for anything fancy in the kitchen. Enter: Spicy Baked Chicken Wings.

They’re the kind of meal that delivers on every front – crispy, spicy, ridiculously moreish – and yet, they’re laughably easy. I made them that night with a quick homemade ranch dipping sauce, and let me tell you, they hit the spot. Oven-baked wings are one of my favourite shortcuts when I want something fun (food is allowed to be fun!) without turning the kitchen into a grease-laden disaster zone. And I don’t know about you, but the smell of deep-frying anything lingers for days, which is the last thing you want when you’re trying to come home to a clean-smelling house.

Once the chores were done and the bags were finally packed, we tucked into our spicy baked chicken wings alongside some hot chips from the local chippy. Zero shame. It was simple, delicious, and exactly what I needed before a long road trip. A cosy night in with wings and good movies – pure bliss.

A Wing Lover’s Dream Without the Fuss

My issue with traditional fried wings is the sheer effort. All that standing over hot oil, the inevitable splatter burns, the cleanup afterwards – it’s just too much. When I discovered that oven-baked wings could be just as crispy and flavoursome, my life genuinely got easier. These spicy baked chicken wings don’t need constant attention. You toss them in their coating, pop them in the oven, and they pretty much take care of themselves.

What I love about cooking wings in the oven is how easy it is – you can tweak the heat to your liking, throw in a little smoked paprika, or even a dash of honey if you’re feeling adventurous. They crisp up beautifully with just a touch of oil and the right amount of space on the tray. Honestly, it’s all about letting them breathe in the oven – crowded trays lead to soggy skins, and no one wants that.

Also – and I cannot stress this enough – a good dipping sauce is a must have. Ranch is my go-to, but blue cheese is also an excellent match if you’re into that. Either way, the combo of spicy, crispy wings with something creamy to dunk them in is just heavenly. You get that punch of heat followed by something cool and mellow. It’s the kind of balance that makes you reach for just one more. And then maybe another.

Fort William Feels

That trip to Fort William by the way was magic. Snow-capped peaks, icy lochs, and a proper snowstorm on the drive up. It was like driving through a postcard. I’m always a little bit in awe of how peaceful and dramatic the Highlands are – it’s the kind of landscape that makes you slow down, breathe and simply appreciate the quiet. And honestly, I needed that. Life had been a bit non-stop leading up to that point, and this was a welcome pause. This also ends up being the last trip I take with my husband – not that he knows that yet. But I can’t really get into that just now… plans are still underway for a big change…

We spent our time wandering, soaking in the views, and marvelling at just how scenic it all was. I even found myself daydreaming about renting a little cottage there for a winter writing retreat. Somewhere with a fireplace and good Wi-Fi, obviously. Fort William isn’t a big town, but it has charm. And come February, it turns into a snow-dusted little gem.

It made the effort of packing and prep the night before worth it. That’s why I’m so glad I didn’t stress over dinner. The spicy baked chicken wings were the perfect easy meal to tide us over before the long haul north. I’ll always associate them now with that little escape, which makes them even more special. Funny how food does that, isn’t it?

Ingredients Breakdown

For the wings themselves, I stick with the basics that never fail me. Chicken wings, of course – skin on, bone in – because that’s where the magic happens. A little olive oil to help everything stick and crisp up, and a dusting of plain flour to create that light, golden coating. From there, it’s all about the spices. I use a mix of paprika, cumin, thyme, oregano, onion flakes, garlic salt, mustard powder, cayenne, and a pinch of table salt. It’s smoky, earthy, herby and hot – all the things a good wing should be.

I like this particular combination because it hits every corner of the flavour map without needing anything fancy. The garlic salt brings a bit of umami, the cayenne gives a lovely kick (without burning your mouth), and the thyme and oregano bring that subtle, almost nostalgic warmth that makes me think of old school spice cupboards and roast dinners. The flour just ties it all together with a soft, crispy edge that makes these oven-baked wings feel indulgent without the deep fryer.

And then we’ve got the ranch. I make mine with sour cream, mayo, and my own ranch seasoning blend – you know, the usual suspects like dill, chives, garlic, and a bit of onion powder. Creamy, cool, and the perfect match to spicy wings. It’s mellow and tangy and just pulls everything together. Honestly, it’s the kind of dipping sauce that makes you wish you’d doubled the batch. And yes, you absolutely should.
